Fresh Vegetable and Tortellini Salad; delicious do-ahead picnic fare
1 lb. Tortellini
3/4 lbs. Lamagna Ricotta
1/2 c. olive oil
1/2 c. Parmesan Cheese
3/4 c. diced pepperoni
1 c. chopped broccoli
1/2 c. green pepper - cut up
1/2 c. red pepper - cut up
1/2 t. garlic powder
1 t. dried oregano
1 t. dried basil
Cook tortellini as directed, drain and rinse with cool water.
Combine ingredients in large bowl; mix.
Garnish with red and green pepper rings.
Chill several hours or overnight.
Serve cold.
